Pork Menudo Ingredients
- 1/2 kg pork liempo (bite sized cubes)
- 1/4 kg pork liver (bite sized cubes)
- 2 pcs medium sized potatoes (diced)
- 1 pc medium carrots (diced)
- 1 cup cubed red and green bell pepper
- 6 cloves garlic (minced)
- 1 pc medium onion (minced)
- 1 (250g) pack tomato sauce
- 1-2 cups water
- 1 tsp sugar
- ground black pepper to taste
- 2 tbsp raisins (optional)
- 1 cup Soy Sauce
- Spring onions (optional)
- Hotdogs (bit sized, diagonal)
Pork Menudo Procedure
- Marinate pork in soy sauce for 30 minutes to 1 hour
- Heat oil in a sauce pan
- Saute onion and garlic
- Add the pork and cook for 10 minutes
- Add tomato sauce and water and cook for 30 minutes
- Add liver and hotdogs and cook for another 10 minutes
- Add the vegetables - potatoes, carrots, raisins, red and green bell pepper. Cook for 10 minutes or until the potatoes and carrots are cooked/soft
- Add sugar, salt, and pepper as desired
- Serve hot with rice
